It's no secret that I love my food.
Infact you only need to look at my tummy to be able to see that's a fact.
However I am trying to be good.
(Hubby always tells me I'm trying but I don't think it's meant as a complement!)
So last nights tea was a healthy version of chilli con carni.
I took one tortilla and moulded it over an ovenproof bowl. I then placed it in a hot oven for 5 minutes.
The result was this:
My own tortilla bowl.
I then cooked lean mince, combined it with chilli's, tomatoes and kidney beans and simmered till cooked through.
Whilst this was cooking I prepared my salad and began to layer up my bowl as such;
First salad,
Then chilli,
First salad,
Then chilli,
Then cheese.
And it has to be said it was yummy!
I know it was good as no one made a sound.
I am looking forward to trying some of the recipes from my new cookbook.
(Well new to me anyway!)
A bargain at 50p from the local charity shop and it is brand new too!
I love courgettes so this really appears with the coffee twist.
